Chapter One — The Clay
Close-up of cracked clay interior of a traditional tandoor oven glowing orange from heat
Origin

The Clay

Built by a village potter in Rajasthan

Our tandoor was shaped by Govind Kumhar in Jodhpur — the same family that has fired clay for five generations. The cracks you see inside are not flaws. They are memory.

Process

The Heat

500°C — the temperature of honesty

No shortcuts. The charcoal takes forty minutes to reach the right ash. Then the dough goes in.

The Hands

Chef Arjun Mehta has kneaded the same dough since he was eleven. His hands know when it is ready before the clock does.
