The Clay
Our tandoor was shaped by Govind Kumhar in Jodhpur — the same family that has fired clay for five generations. The cracks you see inside are not flaws. They are memory.
The Heat
No shortcuts. The charcoal takes forty minutes to reach the right ash. Then the dough goes in.
The Hands
Chef Arjun Mehta has kneaded the same dough since he was eleven. His hands know when it is ready before the clock does.
Anniversary & Couples
The kitchen is the theater. Your chef works twelve feet away. Order the whole lamb shoulder and let the evening unfold without a clock.
